Chef Pablo Aranda invites you on a journey of return: a bridge suspended between
the luminous spirit of Mallorca and the deep-seated roots of his native Granada.
This menu is an act of "tribute" to Federico García Lorca, Granada’s most illustrious and eternal son. For Pablo, cooking is akin to writing a verse: it requires
technique, but above all, it requires “duende” that mysterious spirit which Federico
described as a power that rises through the soles of one's feet and burns.
Through the flavors of the land and the sea, we will traverse the poet’s sentimental
geography: from the whisper of water in the Albayzín to the dark greens of his
“romancero”. Prepare to experience the clash of opposites and the raw beauty of the
authentic.
